  • 8ounces cooked lean boneless pork or 8 ounces chicken, chopped

  • 4cups cold cooked rice, grains separated (preferably medium grain)
  • 4green onions, chopped
  • 2cups bean sprouts
  • 2tablespoons light soy sauce (add more if you like)

SPRING ROLLS recipe 





HOW TO MAKE SPRING ROLLS: STEP-BY-STEP RECIPE

To make the spring rolls start cooking the noodles according to the directions on the package.
Mix together the carrots, cabbage, bean sprouts, garlic and oil.
Drain the noodles and cut them into 4 cm long pieces and add them to the mixture.
Season with salt, ground black pepper, soy sauce and a pinch of sugar and gently beat the egg.
Remove one spring roll sheet from the pile and place on the work surface. Spread 30 ml of filling in the middle.

How to make a pizza:
Step 1: Place a pizza stone or an inverted baking sheet on the lowest oven rack and preheat to 500 degrees.
Step 2: Stretch 1 pound dough on a floured pizza peel, large wooden cutting board or parchment paper.
Step 3: Top as desired, then slide the pizza (with the parchment paper, if using) onto the stone or baking sheet. Bake until golden, about 15 minutes.
Pizza Dough
Whisk 3 3/4 cups flour and 1 1/2 teaspoons salt. Make a well and add 1 1/3 cups warm water, 1 tablespoon sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil; knead until smooth, 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled, about 1 hour 30 minutes. Divide into two 1-pound balls. Use 1 pound per recipe unless noted.

Chocolate Cake Recipe

Chocolate Cake Ingredients:
  • 3/4 cups butter or margarine, softened
  • 3 eggs
  • 2 cups sugar
  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 teaspoon vanilla
  • 1 1/2 cup milk
How to make Chocolate Cake:
  1. Pre-heat oven to 350 degrees.
  2. Grease and flour three 6" X 1 1/2" round cake pans.
  3. Mix together flour, cocoa powder, baking powder and baking soda. Set aside.
  4. In a large bowl, beat butter, eggs and vanilla.
  5. Gradually add sugar.
  6. Beat on medium to high speed for about 3-4 minutes until well mixed
  7. Alternately combine in flour mixture and milk to batter while beating.
  8. Continue to beat until batter is smooth.
  9. Pour equal amounts of batter into greased and floured round cake pans.
  10. Bake 30 to 35 minutes.
  11. Check with a toothpick to se if it is done. Bake a few minutes more, if needed.
  12. Remove from oven and allow cakes to cool in pans for a few minutes.
  13. Place cakes on a wire rack, to them allow to completely cool.

  1. Frosting Cakes:
  1. If you want to make  your own frosting, 
  2. Place one round cake on a cake plate.
  3. Spread frosting on top.
  4. Repeat this for the third cake.
  5. Frost top of the third cake.
  6. Frost the side for the cake

Recipe of momo dumpling :

Momo (dumplings) is one of Nepal’s most popular dishes which can be eaten as an entree or as mains. It’s a dumpling filled with meat or vegetables as well. It is eaten with tomato pickle (golbheda ko achar). It is one of the must have food items in the restaurants as well.

Ingredients:
  • 500 gchicken mince (using thigh meat)
  • ½  red onion, finely chopped
  • ¼ cupcoriander, finely chopped
  • 2 tspfresh minced ginger
  • 2 tspminced garlic
  • ½ tspground coriander
  • ¼ tspturmeric
  • ¼ tspground cumin

Chatamari:

Utensils:
Flat pan with lid
Wet cloth
Spatula

Ingredients:
Rice Flour-1 cup
Lentil paste-1/3 cup
Salt-1/6 teaspoon

For topping:
Ground chicken/turkey or any other ground meat-150 gram
Chopped onion¼ cup
Green peas-¼ cup
Diced tomato-1 tablespoon
Diced hot green pepper1 teaspoon
Garlic-1 teaspoon
Ginger-½ teaspoon
Oil-1 tablespoon
Salt to taste

Alternative Toppings
Egg
Ricotta cheese

Method:
Pre-cooking
Soak black lentil in water overnight or until the black coating is easily removed.
Remove black coating by rinsing with water
Mix lentil paste with rice flour to make a thin paste. (thinner then cake paste)
For topping mix everything well.

Cooking Part:
Heat the flat pan on medium heat
Put the paste on the hot pan in rolling action making as thin of sheet as possible
Put all topping on the paste.
Cover the paste and cook in medium heat (chatamari is cooked from only one side)
Cook until the paste is done and serve hot.
Use the damp cloth to wipe out any burnt left behind

Chatamari Ready !!!

Bara Non vegetarian – Masu Bara – Meat Bara

Utensils

Big bowl , Spoon
Frying pan, Plate
Spatula, Small bowl

Ingredients

Ground meat – 300 grams (chicken, mutton or buffalo)
Black Lentil- half kg
Salt- a pinch
Oil -1 cup
Turmeric-half table spoon
Ginger paste- a little



















Method

Soak the black lentil in cold water for a night

Wash off the skin and grind the lentil into fine paste (use as less water as possible)

Add turmeric, ginger, Garlic, 2 eggs/ 3 table spoon ground meat and salt and stir it properly

Heat Nepali flat pan (tawa), put half table spoon of oil

Take some cold water in a bowl

When the oil is hot put some water in your left pam, take a small ball shape in your right hand and spread
it a bread on the pan using your all your fingers

Turning both sides, if needed add some oil around the bara

Cover it and let it cook for sometime

When the bara is cooked it turns into golden brown.

Bara is ready to serve.

Yamari Recipe

Yomari

Ingredients:
400 gm Rice flour
50 gm Wheat flour
200 gm Chaku (Molasses)
½ cup Roasted Sesame seeds (ground)
½ cup Roasted Cashew nut or peanuts (ground)
½ cup Coconut (grated)
Vegetable oil

Methods:
For fillings:
Break the Chaku (molasses) to small pieces, so that it can be evenly cooked. In a saucepan, put the Chaku and pour a cup of hot water. Heat the pan until Chakucompletely melts in water. Add crushed sesame seed, cashew nuts, coconut and a tablespoon of rice flour. Cook in low heat with continuous stirring until the paste becomes gooey (honey consistency).
For making Yomari:
In a bowl, take rice flour and wheat flour, mix them together and add around one and half cup of lukewarm water. Mix it together using your hand or food processer. Dough should be very soft but not runny. Add some water if it’s hard and some more rice floor if it’s runny.

Then oil your hand with vegetable oil to make sure that dough doesn’t stick to your hand. Take a small portion of dough in your hand; start making the shape ofYomari and cavity for fillings with your index finger. Fill the Yomari with the fillings. Check out this video for making the Yomari.

Steam Yomari in a momo steamer for around 10-15 mins. Sweet and fluffy Yomariis ready. Eat it when it is hot.  I love the bitter sweetness of Chaku and nuttiness of roasted sesame seed and cashew nuts.
Note: For making the Khuwa Yomari, replace molasses with Khuwa, add sugar, cashew nuts and coconut. Even you can chocolate fillings.
